Iraqi Urooq Kebab
The Iraqi Urooq Kebab is called by several names, including the Urooq Kebab, the Urooq , and the Tawa Kebab (meaning the frying pan), because it is fried in oil, unlike the well-known kebab that is grilled on charcoal.
It is one of the famous traditional Iraqi dishes throughout Iraq and is eaten at all times for breakfast, lunch and dinner, and almost the method of work and ingredients for making this dish is the same in all governorates of Iraq, as well as the method of work.
This dish is served with fried eggplant, tomatoes fried in oil, lentil soup, green beans, Halb Kibbeh and green salad.
Required components:
- Beef 400-500 grams, cut into small cubes
- Large chicken breast, cut into small cubes
- 1 large mashed potato
- 2 large onions - finely chopped.
- 3 - 4 large tomatoes - finely chopped
- Parsley cup - finely chopped.
- Spices or biryani spices + paprika.
- 1 - 2 cups of flour.
- salt.
- oil
The method of work:
Shred one potato in a large bowl, cut the meat into very small cubes and add on top of the shredded potatoes.
Cut the chicken breast into small cubes and add to the mixture.
Chop the onion and tomato into very small cubes and add to the mixture.
Chop the parsley very fine and add to the string, add spices, salt and paprika.
We start by placing 1 cup of flour on top of the mixture + 1 cup of water. Mix the ingredients well until all the ingredients are homogeneous with each other and with the flour. Add the remaining 2 cups of flour and increase a small amount of water until the mixture becomes a soft and smooth dough.
Heat the oil in the cooker and start frying by taking a small amount by hand or with a large spoon and dropping it into the oil.
Note:
When frying, we should not leave it for a long time, we must constantly stir it .. so that it does not burn because the Urooq Kebab does not need a lot of cooking.
